Sep 4, 2016 · You can also use an extract same process but u just soak the beans for 1-2 months. This you'll need a lot less in the brew but will get more yield. Im currently working on a cocoa nib and also tongan vanilla bean extracts for a milk stout.

Jan 17, 2013 · My suggestion to new brewers, is to experiment with new flavors during the boil, if it doesn't have as much flavor as you wanted you can always add more in the secondary. I make a really good Vanilla Cream Stout, adding the vanilla bean in the last 30mins of the boil. I use 2 large beans for a 5gl or 1/2 medium bean for a 1gl.

I mentioned that for a vanilla stout, I used vanilla beans in the secondary and then 2 drops of vanilla extract into each bottle when bottling (bottle conditioning). His response was that I cheated with the extract at bottling and that I should only use vanilla beans in secondary to get vanilla flavor.

Apr 2, 2016 · You can add vanilla in secondary, but you should wait until fermentation is complete before moving to secondary. Or you could just add the vanilla at or near the end of attenuation and just leave it in the primary until the flavor is where you want it.
